Sara called a couple of days ago and had a Sunday free between train and bus travel, so she wanted to spend the day in Lugansk. Yeh!! And really it was not about Lugansk, it was about an Amy and Sara Day. I am thrilled! I cannot believe it has been almost a year since we became cluster mates and our host mom’s were planning play dates for us. Sara is one of my closest friends here and I am truly lucky that she lives nearby.
We decided to make chicken fajitas. In my last box from my mom were many packets of fajita and taco mix. And I couldn’t wait to break one out.
Of course, chicken fajitas are not complete without flour tortillas. But we cannot buy such things in Ukraine, so Sara and I made our first attempt at making them ourselves. And they were awesome. Almost exactly like home and close enough that we hardly noticed the difference.
No girls day and night is complete without wine. Inkerman is a winery in Crimea and a popular wine here. It is reasonably priced even for Peace Corps Volunteers and good.
Bell Peppers are ridiculously expensive these days with nothing growing, but Sara and I splurged as we hoped for a little taste of home. And they were quite good.
Delicious! Thanks to Sara for the visit and Mom for the seasoning. The combination made for a fabulous evening!
