Lasagna...Peach Cobbler...and Friends...

I love to cook, and in Ukraine my simple cooking ideas work very well.

I have been wanting to make and craving lasagna, so I invited some friends over tonight for dinner. I even had a Peach Cobbler recipe and the fixin's from a friend in Denver, Lulu. Everything was great. There is no ground meat in Ukraine unless you grind it yourself, so this lasagna had bits of pork. And the only ricotta to be found is at Metro and I didn't want to go all the way out there, so I went with Ukrainian cottage cheese. I did have great luck with mozzarella and lasagna noodles, but I think I will use butterfly pasta next time. Lettuce is still in season, so we had a big green salad and garlic rolls.

As you can see Andrew, Vlad and Kurt were thrilled with an activity that included eating. These guys (plus Yuri) are awesome and have helped so much with my integration, that cooking dinner for them is the best way I have come up with to say 'Thank You'...

This picture is for Lulu. Thanks so much for the Peach Cobbler...it was amazing.
